EnjoyStewart's Date Square Recipe    

An item very much enjoyed in our classes during breaks are our famous date squares. After many requests we are sharing our family recipe with you.

Quick note before you start: If you are gluten conscious, then substitute wheat flour with oat flour. Other flours may be ok. For guest and classes, I blend up oats into flour. Otherwise I use unbleached white flour.

This recipe is made for a 9 x 13 inch pan. If you have only two mouths to feed, you might half the ingredients although ... A) you might change your mind after you start eating them and B) that is what a freezer is for.

Date Mix

2 Bags/blocks of Pitted Dates (approx. 5 Cups)
2 cups of Water or just enough to be level with top of dates in pan
1 capful of Vanilla Extract (non-real vanilla tastes just fine)
1 capful of Almond Extract

Simmer until dates are soft. Stir them until smooth or use blend with hand mixer. Add vanilla and almond extract near the end.

Oat Mix

1 1/2 cup Shortening
2 cups loosely packed Brown Sugar /of other similar sugar

Mix the following ingredients first

3 1/2 cups Oatmeal
3 cups Flour
2 tsp of Baking Soda
1 1/2 tsp of Salt

Add dry ingredients to shortening/sugar and fold in lightly
Get your Vanilla and Almond extract ready again. Add 2 tsp Vanilla and 1 tsp of Almond to a cup of milk or water (whichever you prefer) and start sprinkling it into the mix as you fold it. At this point, you are not really stirring, it is more scooping and dumping it back into it so it gets nice and clumpy. If the mix still has more dry parts, sprinkle in some water just until it is lightly damp.
Put a little shortening on the pan.
Put a little more than half of the oat mix into the bottom of the pan. Don't push it down too much. Clumpy is good. Pour in the date mix on top of that. Smooth over the bottom oat layer.
Add the rest of the oat mix in clumps to cover the top of the dates. It may not seem like it will cover the top but it will. If you have to spread it out more, just move chunks around. Don't smooth it out as clumpy works best.
Cook in oven at 350 degrees for 30-40 minutes, depending on your oven. When done, the top will become more golden or light brown . If the top seems still slightly shiny like you think it could take a couple more minutes to cook, take it out. It will still keep cooking and setting.
If you are freezing it, cutting it into 1-2 inch strips works well.
Sneaking a bite tip: If you are sneaking a bite from the freezer, let it thaw first before eating it as it is much more tasty that way.
